Beef Noodle Soup

I am posting this photo with my buddy Thinh Nguyen in mind. He commented the other day that threads on his blog always turn to food, so I thought I'd get this one started. Cooking is one of my favorite hobbies, and this is my latest kick. I will post my recipe(still under development) in the comments section later. Perhaps I'll get some of Thinh's recipes in return.

David’s Beef Noodle Soup

Lean beef, London broil works great
Chicken broth, the organic kind in the box is best
Garlic
Thai style chili peppers (cayenne will do)
Udon Noodles (if you can get them fresh rather than dried do so)
Soy sauce
Hoison sauce
Bean Sprouts
Green Onions

Optional:

Pickled Mustard Greens
Water Chestnuts
Bamboo Tips

Slice the beef into thin slivers; be sure to slice across the grain. Put in a bowl with some Hoison and Soy sauce, let marinate. Fish sauce also makes a good marinade, but is stinky. If you use it, be sure to rinse it off before putting it in the pot. Boil chicken broth; add garlic, soy, hot peppers, and other ingredients. Add beef and cook until done, then add noodles and cook until tender. Serve with fresh bean sprouts on top. In the photo, they had not yet been added.
